"Has anybody considered the culinary
potential of the Coat Of Arms? Well,
why not try our kangaroo & emu on
opposite sides of an oval plate topped
with a puff pastry shield & patterned
with wattle seed? You arrange the tiny
puffs of pastry to represent the wattle
flowers in the background. Now with
kangaroo, emu & wattle as the major
emblems, the Australian Coat Of Arms
can be 'plated' to give a truly national
dish. Also it is probably the world's
only legally edible Coat Of Arms. (One
would be arrested for 'plating' the eagle
on the US Coat Of Arms or the tiger on
the Malaysian.) But here in the 'lucky
country' our wildlife heritage makes a
delicious snack for all the family!
Consider the bar-b-que - regarded
internationally as typical of an Aussie
summer of entertaining. Now instead
of throwing 'a shrimp on the barbie,'
one could 'chuck on an old kangaroo
or emu.' Why how about kangaroo &
emu instead of wild boar to give emu
e canguro alla cacciatore instead of
cinghiale alla cacciatore? & the great
Chinese dish of 'deer in the big jungle'
(which comprises of raw venison strips
stir fried with onions & ginger) can be
easily & quietly transformed into 'emu
& kangaroo in the bush'. Serve with
rice." (Whilst the trendie new Ranger
at Lake Mungo National Park cooks up
kangaroo stew & tasty tit bits for the
tourists on behalf of the industry/ dad
rings me from Brewarrina & says: 'no
matter what they put in the newspapers
or show on TV we'll never eat fucking
emu or kangaroo out here.') |
